What is the question?
If you have a Zumo, use it.
My 2720 was not a great choice, and has given me nothing but problems in a motorcycle application. Love it for the car, though.

There is an official Argentina/Chile GPS mapset from garmin that is perfect with street addresses, fuel stops, etc. I used it and loved it. After the rest of central/south america, it was nice to just follow GPS for a while instead of having to actually interact with people
The best idea, IMO, is to look for POIs generated by fellow motorcycle travelers. PM singaporedream and see if he'll send you his tracks. He was very detail oriented and marked every stop/gas station / camp ground.

Dan, if possible, get the Map Source software loaded to your PC, that way you can use other peoples tracks and do all of your planning on a big screen.
Then, just uploaded your work to the Garmin.
I've never used a Zumo but I can't imagine that it didn't come with Map Source on a disc.
At the moment, I'm just using Bob's Smelly Biker maps, not even close to accurate for Colombia/Ecuador but I'm making it work with other peoples tracks and a paper map.

GPS Maps for South America
A great source is the website Smellybiker.com. It is a low cost of GPS maps easily downloaded to a Zumo.

Colombia GPS data, maybe
I just found this torrent file with some Colombia GPS map data, supposedly. Mapa Ruteable Colombia para GPS Garmin : Other > Other - Mininova
I'm in Venezuela at the moment, pain in the arse to download and install it on my GPS using public computers, but I'll do it if someone else can do it first and tell me it's real data! Thanks!
By the way, that free Venezuela data has been really great! ( Gpsyv) It almost makes me want to travel in Venezuela for longer... well, not really.

Check out Open Street Map. It is a free mapping project for the world. OSM is like wikipedia for maps. I dont know the details for south / central america, but it will be 10000x better than the basemap.
OSM Map On Garmin - OpenStreetMap Wiki
warning: some work required to get the maps installed! I can help if you're stuck.

Horizons Unlimited is not a big multi-national company, just two people who love motorcycle travel and have grown what started as a hobby in 1997 into a full time job (usually 8-10 hours per day and 7 days a week) and a labour of love. To keep it going and a roof over our heads, we run events all over the world with the help of volunteers; we sell inspirational and informative DVDs; we have a few selected advertisers; and we make a small amount from memberships.
You don't have to be a Member to come to an HU meeting, access the website, or ask questions on the HUBB. What you get for your membership contribution is our sincere gratitude, good karma and knowing that you're helping to keep the motorcycle travel dream alive.
