Is there one company that i can get one policy to cover me in mexico and central america ????

No. Each country its own, to the extent that you want to bother. Several require 3d party, most don't. Mexico is the only one which ends up expensive for a short trip.

Nicaragua ,Belize,Costa Rica and Panama now require Liability insurance and sell it at their borders. The other CA countries do not sell it at the border and it is difficult to get.
Sanborn's only through their Brownsville office sells liability for the CA countries but it takes a week or two to get it all done. It may still be possible for you to arrange this by internet and faxes via that Brownsville branch.
