My advice for Ireland
 

"Pub grub" is available in most bars during lunchtime hours. It can be very good, generous helpings and seconds are free.
If you can survive on a light breakfast, have a massive lunch in the pub, it will not take a lot of food to take you till bedtime.
You can live like this for less than 15 euro/day.
Camping can be free if you ask a farmer and if your lucky, they will invite you in for tea.

How long would you guys take on this general route?

Also would a VFR 800 be a good bike for this?

I did half this in a month (UK to Poland, via Switzerland, Czech Republic and Austria) and back. I wanted to spend days having a look around certain places. It all depends on how long you've got to play with, and what you want to get out of the ride? Many people will say that travelling slowly and seeing more is the way to go, and I agree! Personally, I like to limit my days to (mostly) between 150 - 200 miles, with days off at regular intervals. I tend to choose routes between particular points of interest.

As for the bike, I've heard many times here that the best bike for a trip is your bike, a sentiment with which I whole heartedly agree! :thumbup1:

I was mainly worried that it might not be able to handle Bulgaria/Romania/Ukraine (lots of dirt roads?)

Then stay off the dirt; there is plenty of asphalt to ride and the VFR is a fine bike for that.

Your route is missing out the Alps and the Pyrenees! Must be an error, Shurley!
Consider hostels, very good value, clean and comfortable. Double rooms often available. Each country has its own national organisation but you should find them all here too.
The lunch-time meal is often the best value but often a set menu is available in the evening too.
(Pub food in Ireland is indeed good - but I've never been offered free second helpings! What's the secret WW? )

Was looking at your route , personally i would take take the ferry from kiel to Klapedia( lithuania ) do a bit of the baltics then into the polish lakes region and down the east border of poland , rather then the bit of poland which you have marked . Lublin is nice , but the rest of it is hard going road wise . It was mid thirties when i did it and 300 miles a day was more then enough - note distinct lack of M/ways in the country . Fuel is cheap there ( poland / baltics ) as is accomodation .
You could then swing into translvania and do the two passes the other guy was talking about .
The Vfr is fine - i did it on a Pan :scooter:That said the only reason i didnt fall into too many huge holes in the road was that the Pan was too big to fit :thumbup1:
