This might be a possibility:
Cyprus ferries schedule and prices for ferry services linking Cyprus, Egypt, Israel, Syria and Greece

From Cyprus it's easier to get to Turkey. I doubt whether there is a ferry service from Israel to Turkey :innocent:

All connections are locked inside deep-freeze by very successfull politicsmen at both sides!!!
