OSM is collaborative, so the general idea is that you take those trail routes that you have noticed are not showing and feed them into the OSM guys who will add them to the next update of the mapping.
The "how to's" have been posted somewhere in here previously - being one who follows the route well travelled previously, I have never found the need.
