Even with physical SIMs you may need to make changes to the configuration, such as the APN (Access Point Name) settings. Also make sure tethering (personal hotspot) is enabled if you need this. If your home SIM has been removed, put it somewhere safe. Do not leave or pay until you are sure the new SIM is working for both voice and data.

TBH I’m not 100%! I *think* the error I made was not buying an esim per se, but buying one that switches mobile network via a third party provider; I’m pretty sure you can still buy physical sims that do the same.

From what I recall, I ended up using Maroc Telecom, roaming via my UK Vodafone account, which was a lot more reliable and expensive.

So the problem may not have been the esim but rather I chose one which switched.
