Next year plan to go around Baltic after Assen Moto GP so Germany Poland Lithuania Latvia Estonia and Russia (St Petersburg) then home via Helsinki Stockholm Copenhagen and Rotterdam > Hull. Any particular problems crossing borders in/out of those countries, any best ferry crossings, Baltic bridges etc. We have 6-8 weeks to play with which seems adequate to me.
Two people and two bikes.

You'll need a visa for Russia. Tourist visa will be fine for what you're doing.

If you plan on crossing between Estonia and Russia at the Narva crossing, be aware that you need to pre-book your crossing online and go to the waiting area outside of town until your license plate shows up on the big screen. Don't go straight to the actual border crossing in the town center.

There is a good chance that by next year, you will be able to enter Leningrad Oblast and St Petersburg with an e-visa: https://evisa.kdmid.ru/ They have announced that they will be extending it to that region from October 2019. You should be able to enter from Estonia and exit to Finland.

I would suggest taking the Turku-Stockholm ferry rather than the Helsinki-Stockholm one. Helsinki is a boring modern city that only became important in the 20th century. Turku should be much more interesting to visit.
