You might be over-thinking this, OP.

You want to ride mostly on the tarmac? You like a bike? Good, take that one.

To be honest, I spent 3 months riding around Europe on my then new BMW S1000XR and it was faultless. Lots and lots of fun in the twisties, even the scratchy ones, comfortable etc. It even worked okay on dirt tracks kinda level of dirt. Why think about it more?

It’s just a bike. Any bike.

The other possibility I was thinking about is riding my RS until Eastern Europe. Then looking for more of an adventure bike for the Asia part of the trip. Does anyone know the logistics of selling ones bike in a foreign country? I assume most countries want you to take your bike with you when you leave?

Procedures and possibilities vary greatly from one country to the next, making it difficult to offer general rules. There are often ways to sell a bike locally, but only rarely will you get what it's worth back home--that's because selling is seldom (if ever) totally legal, and the buyer is assuming a measure of inconvenience, risk, and/or expense. Basically, wherever you go you'll be riding under a temporary permit which requires you leave with the bike--countries differ regarding the means and severity of enforcement.

At the risk of sounding like a broken record, I'm going to suggest that you use the search function (upper right on this page) to do some basic research. You'll find that many of your questions have been addressed exhaustively in the recent past, both in general and in specific terms.
