You will be spoilt for choice, ride the smaller roads that weave in and out of the Dividing Range for some great scenery and riding. The Border Ranges are worth the visit - but so are most of the beaches and rivers. The small seaside villages are usually easy to get to.
The Pacific Hwy is pretty boring but needed to get to some nice spots along the coast.
One of my favourite spots is Trial Bay, but the camping is exorbitantly expensive.
The Waterfall Way is worth the ride as is the road upto Dorrigo.
I also like the area around the Nymboida River Valley.
September might be school holidays so some places maybe busy.
