Some sites to check
A great time to be in Italy. My girlfriend and I toured central Italy in July. We too where there for a wedding. I had a difficult time locating a rental, due to the high tourism season. Some sites listed below may be of some help.
www.dhpmoto.com
www.bosenburg.com
www.cimt.it
www.lifeinitaly.com
www.levolpiccione.it
www.ridetheworld.com
www.admo-tours.com
www.mototouring.com
www.happyrent.com
www.tripadvisor.com
Most of the above sites include hard luggage,(helmet, bike locks, tail box, saddle bags and tank bags), in the price. I would advise on either taking your own helmet or purchasing one there as the ones they provide are a bit questionable. Some require additional fee's for the said equipment.
For what it's worth a great car rental place is www.autoeuropa.com.
As a motorcycle enthusiast I would reccomend the Ducati factory/museum tour in Bologna. It's free of charge and well worth the time. If you do decide on this, send an e-mail to www.ducati.com to give notice for the factory tour. The Aprilia factory in Milan and also the Moto Guzzi factory in Rome, if you are going to be near any of those areas.
As you probably know, do not leave anything unattended, it will not be there very long without a watchful eye.
Hope this will be of help to you. Enjoy your trip and be safe.

Although not in Pisa, I have rented from a place not far from it. In Il Ciocco (about 60km - 1h from Pisa) there is .:: F-Fasola ::. - Home a KTM Adventure Tours partner. I'm not sure if they let you rent bikes only (need to ask), but they offer a lot of courses, such as Supermoto track racing, Offroad/Enduro courses at all levels, and guided tours.
I was directly in Il Ciocco for a conference and simply showed up there at the shop and booked a guided tour. Got all equipment (helmet, boots, gloves, armor, pants and jersey) plus a really nice KTM (several models to choose from). Signed a liability thing declaring I'm ready to die or something and off we went.
I had expected it to be good fun but it turned out a lot better! I turned out to be the only person on the tour, so I had my private instructor for the whole day. It improved my off-road riding a lot!!! but also the tour itself was amazing. All off-road, beautiful landscapes, montains, rivers, remnants of an old roman road, amazing views ... It'd do it again.
Lucca, which is also worth a visit if you like historic cities and the like, complete with walls and mout, is on the way from Pisa to Il Ciocco, about a third of the way. So that could make a nice trip altogether.
I just saw their website isn't fully translated, but people spoke english in the shop, so maybe send them an email or call them.
Have fun :-)

Horizons Unlimited is not a big multi-national company, just two people who love motorcycle travel and have grown what started as a hobby in 1997 into a full time job (usually 8-10 hours per day and 7 days a week) and a labour of love. To keep it going and a roof over our heads, we run events all over the world with the help of volunteers; we sell inspirational and informative DVDs; we have a few selected advertisers; and we make a small amount from memberships.
You don't have to be a Member to come to an HU meeting, access the website, or ask questions on the HUBB. What you get for your membership contribution is our sincere gratitude, good karma and knowing that you're helping to keep the motorcycle travel dream alive. Contributing Members and Gold Members do get additional features on the HUBB. Here's a list of all the Member benefits on the HUBB.
