Sorry, my friends in our bike club here tell me this mountain has been closed to bikes several years ago, after the French air force had to recover some bikes whose riders were unable to redescend.
While some years ago Italy was a bit like France, i.e. you ignored closure signs and proceeded at your own risk, this has changed a lot in recent years and you risk stiff fines and possibly confiscation of bike.
For other peoples info: Mt. Chaberton used to be the highest point accessible by bike in the Alps. The military track leading o the top has largely slid away over the last decades, making car access impossible some time ago. Even the ascent by bike is said to be challenging, never mind the descent.
