You can buy liability insurance at the border that will cover you while you are in Turkey - in fact, it is mandatory to do so - but one thing that those of us who travel far and wide have learned is that it is very difficult, if not impossible, to purchase any kind of insurance (theft, comprehensive, collision, recovery) other than liability once you get outside of the EC countries.
The best suggestion I can offer is that if you should encounter some unfortunate problem that leaves your motorcycle unridable, or leaves you unable to ride it, that you contact a household moving company in Turkey that specializes in household moves ('removals', in British-speak) to locations outside of Turkey such as your home country. If the fuel is drained out of the moto, a household moving company will probably agree to move it.
Lastly, be aware that the Turkish border officials are quite particular about ensuring that all your paperwork is in order when you enter the country. So have the correct copies of your vehicle ownership, licence plate registration, etc. on hand to present when you buy the insurance at the border.
Anticipate that it will take you about 90 to 120 minutes to go through the process when you enter Turkey. All the officials are quite polite and easy to get along with, but they are thorough in their examination of paperwork.
