That's two routes, not three.
I wouldn't go route 1. It's OK until Taliouine, then quite boring from Ouled Birhil to Ait Melloul, and then busy around Agadir.
Route 2 is better, long stretches through semi-arid hamada with mountains either side at times. Swimming opportunity at Tissint (between Foum Zguid and Tata). At the western end of Tissint the road takes a sharp left. Turn right onto a track for 200m to the waterfalls. When you regain the road, a km or so further on there's a great photo spot on the right with a deep gorge.
Route 3 could be Taliouine - Igherm - Tafraoute (gorgeous) - Tiznit - Mirleft - Sidi Ifni - Tan Tan. If you go via Igherm, take time out for a short detour to Agadir Talmoudate near Igherm at N30 03.498 W8 23.752
Agadirs, also called Igherms, are fortified collective warehouses, many between 500 and 800 years old. See A20 The Three Agadirs for photos of examples.
