There are two places near Azrou where you are guaranteed to see the Apes. If you are visiting in the summer months, take some water, they will drink out of bottles if you hold it in the right position.
Heading south towards Midelt the road climbs through Holm Oaks, then as then altitude increases you start to see Cedars. After about 5km there is a crossroads with some rock/fossil sellers and a car park on the left, you will find some apes here. Ask for a guy called Idriss.
The other place is heading north east towards Ifrane. Take a right on the road signposted Cedre Gourand and it climbs towards cedars. Once again there are rock sellers in the appropriate place. This is also a popular picnic site. The two sites are linked via a piste, so if you are in a 4-4 or on bike you can make a loop of it.
Also of interest near Azrou is Mischliffen, a small ski resort nestling in the caldera of an extinct volcano.
