Anything simple, light, japanese, carburettored, that you can gets aftermarket bits for easily to suit the vast Mongolian distances ... specifically oversize fuel tanks and the like.
If I had to pick one bike, I would probably say go for a Suzuki DR-Z400 and stick a 28 litre Aqualine tank on it.

Contact Vait at the tour company above for bikes for sale....
or contact Rene/Sybil at Oasis

They are German/Austrian but also speak English, Mongol and Russian...
Both have bikes available for sale and rental...

Many Mongolian herders ride the IZH Planeta: WWW.IZHMOTO.RU / Road motorcycle IZH Planeta 5. You can buy one new in UB for only a few hundred dollars. They are very simple machines but do break down very frequently so you should only take this option if you are a very good bush mechanic and you will need to carry along a deent set of tools and spares. I do know some guys who bought Planetas and had a good several week ride through Mongolia and then sold them for almost the same as they paid for them. But they were good mechanics and had to make major repairs several times along the way.

renting chinese motorcycles in Mongolia
There is a girl named Cheke who's renting chinese bikes in UB. Not as good as Japanese ones but so much cheaper.
I did a fantastic trip with her for a very low budget. The bikes were new and her brother came with us as a guide and mechanic. I highly recommend her services.
Google her name and it should be no problem to find her
