Just to answer my question, I did some research and ended up buying Cyberlink Power Director 12 Ultra:

This has been reasonably easy for me to use with some trial and error, in the last few days I managed to produce a 40 minute work training video in H264 format as RoadTrekker suggested, shot on my Canon EOS 70D. My boss was happy enough with the video that he paid me for the program and my time, so it cant be that bad  .
You can produce the video in multiple formats and there seems to be enough features to keep me happy for a while.
Looking forward to the upcoming riding season and editing the footage from some trips.
