I rented XR250 from Victor in Cusco in March, and did 1000kms down to Arequipa. Did some great trails, don't miss Los Tres Canyonnes - stunning. Lots of good trails around cusco, you can do the Manu cloud forest north of Cusco, and the Sacred Valley is lovely.
A couple we met overlanding said the back road to Machu Pichu was the best road they rode in Peru, although the day we went to Machu Pichu by minibus and train, an Argentinian was killed in a rock fall, but it was end of rainy season.

the straw bridge is good, with an interesting ride to it. Its on IOverlander.
Colca Canyon- you can take trails right down to the river.
Beware, bring lots of warm clothes, underthermals, and a puffa jacket and hat for night time. It was really cold 3c at night back in March, the guesthouses don't have heating, but lots of Alpaca blankets. Plenty of guesthouses in most of the tourist towns to choose from.
