I stayed in a nice cheap hotel in Quito many years ago, very close to the centre. Don't remember where exactly but there were many similar hotels.
And, on the little noticeboards in the entrances to these small family hotels was an advert for off-road motorbike trips up into the mountains above Quito. It was a couple of Swiss guys running various 'adventure' excursions for tourists. So maybe they are still there and maybe they'll store your bike. I should think they would. (Maybe they'll also find you a good price for a Galapagos trip).
They provided a bike and all the gear, or they'd escort you on your bike.
And they certainly knew the mountains very well. So if you want someone to show you the possibilities of exploring close to the city they would be worth contacting.
Some photos below of my little outing (just me and one guide). Plenty of mud, and a daunting bridge, but it was quite OK in reality. It went straight into a tunnel at the end. Quite a high altitude though for pulling a bike out of the mud! Easy to run out of puff!
