I flew into the Gambia earlier this week and the borders for the air crossing were operating as normal. Whilst there I took a day trip by road into the Casamance region of South Senegal on the road from Jiboro in the south of the Gambia and this seemed to be operating normally with no hassles at all on the crossing in a private car, albeit a Gambian one with a Gambian friend driving.
The situation there seems a bit fluid at the moment - there's a number of extra Police and Army checkpoints but all of these were just having a quick check of vehicles and were all very friendly. However, the current President is currently saying he will not give up his power to the new President elect and the court system there has postponed the decision on his appeal until early January, so I'd guess this could well interfere with any plans you might have if the transfer of power doesn't look like it will go smoothly.
