Disclaimer: This is a "I know a guy who did something like this" post. He enjoyed his trip, but it's literally sample size 1.
In 2016 I met a Japanese bicyclist who did something similar in the first half of the year, except the other way around and a little more south.
He started in Morocco and pretty much followed the coast until Benin. There he headed north to Ouagadougou, Niamey, Jaunde. Now here's where it gets interesting, he went into CAR to Bangui, then into DRC via Lisala and Isiro.
If you made it til here you should make til Uganda too.
It is possible, it has been done in recent times. Keep in mind however that the security situation can change rapidly and this particular bicyclist had a very different approach to personal safety than I do; he went on to Goma and south to Lubumbashi which was pretty much a no go zone then as it is now.
TL;DR: It seems possible, I wouldn't do it in this year.
