The DR is a perfect bike for NZ especially if you are planning on back roads and the many gravel mountain passes. The speed limit is enforced with draconian efficency so horsepower is not really an issue. I don't know the DR350 well enough to comment on mounting the panniers. It is a good idea to link the two panniers with a strong bracket around behind the back wheel to help share the load. Is there somewhere under the rear mudguard that you could also drop down from to help carry the load too? When you are in NZ, be sure to look us up.
