Just posting with a few ideas, plus to suggest that more information from you might be helpful.
You don't say anything about what kind of riding you favor, how luxurious a lifestyle you lead, or what else you might like to do. There are ample distractions along the way--historical spots, hot springs, mountain biking, hiking, rock climbing, etc. My idea of a good time (back roads, lots of hiking, camping out) might be very different from yours.
If you're in doubt about where to go, think about the Bella Coola valley and Vancouver Island. With only a week you'll have to figure the ferries carefully, but it's a wonderful loop.
On the other hand, the low-hanging fruit would include one or more loops through the Whistler corridor, the Hurley Pass road, the Duffy Lakes region, the Fraser Canyon, the D'Arcy/Seton Portage Highline Road....
There'll be lots of people out on bikes along most of the obvious routes, but few or none on the back roads. You might want to watch the weather forecasts, since we seem to be entering a chilly and damp phase, at least in my neighborhood. If you crave drier weather, head one or two mountain ranges inland and you'll eventually find the desert.
