Each country will have its own rules for visa issue so you will have to do some specific research. For instance, although Brazil may issue visas in a couple of border towns ie Iguazu for other crossings you might have to apply at the Brazil embassy in an adjacent country. In Lima and Sydney it took 3 to 5 days and had to be done in person. For citizens of India it might be completely different. For some countries, you have to apply in your own country of residence so that can be a major complication.

I found it very accurate for Australian citizens with a few exceptions relating to entry at land borders being different to entry by air - eg Paraguay I can get a visa at the airport but not at a land border.
I see that for Peru "National visa may be substituted with a valid US, Canada, Australia, Schengen Area or UK visa or permanent resident permit may be granted visa-free entry for a maximum of 180 days. The visa must be valid for a minimum of 6 months from the arrival date." so that might be one country that is easy. Ecuador is visa free so that is easy too. Colombia "National visa may be substituted with a valid C or D visa issued by a Schengen Area member state " so may not be so bad after all
