Don't know about selling a vehicle in Mongolia, theoretically you (or the buyer) would have to pay import duties but in practice..
As for the number plates, it's pretty easy : make a copy once you're out of EU (I mean, out of green card coverage, basically when you're in Russia) and send the original back to Austria, so that some friend can give it back and cancel the insurance. Local workshops should be able to stamp numbers out of a blank piece of aluminium. Many people (Swiss, ..) have the same problem and use that trick. As far as the russian/mongolian cops are concerned, they couldn't tell how a foreign number plate looks like so if the number checks out, you'll be fine.
We actually lost the front number plate on our 4x4 in Mongolia; we eventually replaced it with a... cardboard with the number on it in Kaz after some cops moaned about it. Got a lot of laughs but no trouble afterwards
