Travel South to North - help with visa application

Was wondering if there were any South African passport holders .... or others, that have travelled overland South to North and across to Europe that could help with some visa info.
Would like to get an idea of when/how to apply for a Schengen visa.
Firstly, I am considering applying for an Italian visa as my ex and my son are both Italian citizens.
I have all the relevant documentation to prove this like birth certificates, marriage cert, copies of UE passports etc etc.
My son is 18yrs old and resident/working in London at the moment.
Secondly, I will be leaving ZAR around mid January 2015 and traveling up through Africa(in my landrover) with the intention of shipping over from either Alexandria or Port Said to Iskenderun/Turkey and then onto Greece. I would like enter Greece come the beginning of May but don't quite know if this is going to happen taking all the complications and costs in Egypt. So it may take more time....or less!!!
The issue here is:
The earliest you can be issued with a visa is 3 months before the date you will first need to use it and Schengen visas are normally issued for the duration you specify, with a maximum of 90 days per 180 days. The visa sticker shows how long you may remain in the Schengen Area, the date on which your visa becomes valid and the date on which your visa expires. After that date, the visa will no longer be valid.
Any info or advise would be greatly appreciated
