Anything that can be considered as being a "security nut/bolt" - locktite or similar. Thats brakes - suspension - steering and the like. OR, you can use some form of locknut - Nylocks, Jet nuts (K-nut) etc.
I would use a lock nut on footrest pegs
Lube others with copperslip/copper grease.
Use appropriate washers... wavey/spring/lock/anty-vibe/thackery - loads to choose from.
For stainless into ferrous/alloy, copper grease is ok but others will say not  ... as long as its not in the list of the security fasteners.
Lube will also effect torque settings. Normally quoted as dry. If you add lube, reduce torque setting by about 40%
