You don't say whether you want to ride it out of India(I don't think this is longer possible) or 'Ship' it out(paperwork headache). If riding, I have heard that people purchase in Nepal and ride from there, it therefore makes the Enfield an 'export model', if buying a new FI unit model, get one that also has a kickstart as 'back-up'!

I was wanting to ship it out, , but not sure whats involved etc. The tour we are doing provides bikes

I shipped my Suzuki bike by air from Chennai to Bangkok 5 years ago. India is a complicated country to ship out of, but it can be done (...I do remember thinking, that it was like spending about 1 week in Chennai working full-time just to arrange everything!)
Another big issue could well be, how to get it road-legal and registered in your home country. To bring a bike this way to the EU would certainly be a headache (bikes sold in India most likely do not meet EU specs, making it close to impossible), really don´t know about NZ, but I´m afraid you might face similar issues.

I shipped an Enfield home to Australia last August 2012. Was fairly easy actually, but I have a brand new one C5 classic, which I plan to take to South America. so I am going to sell it if you are interested then you only have to send it from OZ !!!!! (I had it made 500cc)

I purchased a new one a couple of years ago when in New Delhi from Maddan Motors. They arranged the freight, which was cheap as chips until it reached our docks (then they really rip into you with a range of fees, just like the Banks). For OZ it is really important NOT to have it shipped in a wooden crate or the like. Quarantine will not believe any "Fumigation Certificate" from India. Use no wood what-so-ever in the freighting.
Mine was a reconditioned "1965" 500cc so registering it here was very easy. I had the "logbook" from 1965 to support the date of manufacture and the frame numbers and engine number aligned with the logbook. Having said that we have a scheme that allows any vehicle over 25 year of age to get either a 45 or 90 day permit that allows us to use it for not more than that number of days per year. The days need not be consecutive. It is roughly a dollar a day cost. Excellent idea when, like me, you have a number of such vehicles.
The paperwork at this end such as the Import Permit etc is very easy.
