Personally I'd give Vannes a miss but if you head west from Vannes along the south coast of Brittany you should find the ancient standing stones of Carnac, the remote Quiberon peninsula, the lovely medieval town of Concarneau with it's walled city. Further along is the more modern seaside resort of Benodet. Lovely sandy beaches near Douarnanez, the wild coast line of the Crozon peninsula. East of Roscoff near Tregastel is the Pink Granite Coast with its unusual and fascinating rock formations. You won't get round all this in 3 days though.
Most of the municipal campsites will probably have closed by the end of September but I'm sure you'll find somewhere as those that are open shouldn't be too busy then.
