Wilder Wales
I was thinking of hopping on a ferry over Easter to go exploring in Wales.
Would like to see some of the valleys, do a bit of hiking and travel by back roads / green lanes / gravel tracks.
Basically I'm looking for a bit of adventure, trvelling 1 up on a ktm 640 with panniers and a light load, hoping to wild camp and see some of the impressive welsh landscapes

There are many, many beautiful places to visit in Wales. I haven't been to all of them but here are a couple that I can never get my fill of:
Pembrokeshire - South-Western peninsula. In particular the area around Fishguard, Haverfordwest, and St David's. Walk on the coastal path for at least a few hours. Find high hills and rocks to get a vantage of the surrounding country-side. Look for small woolen mills like Melin Tregwynt.
Brecon Beacons National Park - Beautiful, unfettered, green hills of sheep. Get up high where there are no fences, no curbs, no hedges.
Take your time and get your fill.

Depending on which ferry you catch, you could easily spend your whole visit in the north of Wales (Snowdownia). There's a lot to see and some great countryside to ride and walk.

Now you are talking some seriously fantastic bike roads - surrounded by some equally impressive countryside. As you are in Galway, why don't you head for rosslare to fishguard - so you can do the south west as jparke rightly highlights - over to swansea, gower, mumbles (nice!) - up through south wales valleys through brecon beacons - up through snowdonia (spot on RobRoy) and then eventually to holyhead for the ferry to Dublin?
I'm envious!

One thing to remember in North Wales is that the police HATE BIKERS.... They are comparible to Nazis !!
If you have a loud exhaust, small number plate or get caught speeding, you WILL BE PROSECUTED !!
Keep it slow, legal and relaxing and you will be fine ...

I live just aross the border in England and I ride often in North Wales.
Since Iam retired I choose to ride mid-week.
The emptiness of the roads mid-week can be astonishing. I did a ride there last Friday and I did a route with minimal main-roads but the absence of traffic was almost "post-nuclear". The police seem to target obvious main-road routes so I virtually never see them and "so far" I havent got caught in one of their traps.
I read recently that they just have a new Chief of Police and the anti-biker policy is being relaxed to target obvious speeders and offenders rather than all bikers.
That is good because there is a very small minority of seriously hooligan bikers that shoot all of us in the foot who ride into Wales for a blast on the fabulous roads.
There are lots of superb roads in Wales which are challenging and enjoyable and yet difficult to exceed the 60mph limit much of the time. It depends on your bike I guess whether you enjoy that.
Ted.

I agree with Ted -and I've also heard that the new boss of North Wales police has decided to take a different approach - I think as a result of a big demo there last summer. I'm certainly going to head up through Wales on my travels this summer - there are many places in the Uk that can challenge it in terms of natural beauty, but not so many that also boast such great quality roads. They must know a thing or two in Wales about maintaining the tarmac!
