I've often made Azrou my first stop in Morocco. It's a lovely town especially if you can be there for the Tuesday morning market, the largest in the Middle Atlas.
Tanger is the best crossing, especially now the new Tanger Med port is open. Take the motorway from Tanger Med to Larache which gives you some time to get used to the fact you're in Africa, then cut across to Azrou via Sidi Kassem and Meknes.
Stop at Paysage d'Ito between El Hajeb and Azrou for the marvellous view.
