The general rules are that you need to apply at least 15 days prior to planned entry into the EU, but no more than 3 months earlier. If you have been on the road for more than 3 months then you have a convincing case and may apply at any consulate along the way. If you spend less time on the road, probably getting one back home in SA may avoid having to do some akward explaining. Technically it is also possible to get a Schengen visa at the port of entry, but only if you have a good case of why you were unable to do so earier.
Note that you need to apply at the consulate of your main destination (where you intend to spend the most time), or if that is unclear then the country of first entry to the Schengen Zone.
With the common IT visa platform in place, it should be possible to apply for a visa in one place, and have it issued in another, this is something worth checking with the consulate is SA.
