Welcome to forum...
Keep in mind Turkiye is a large country when compare with most of European countries. One week and back from Istanbul ? Including off-road and side roads/away from main roads? Even not enough for a good Black Sea Coastal Trip...
You can rush, do many kilometres daily, feel tired and see more or can concentrate to a region and do that.
So we can have two choices:
1) Black Sea Coast
2) Cappadocia, south and western Turkiye
1- Black Sea Coast: Istanbul-Bolu-Bartin-Amasra-Cide-Inebolu-Sinop-Samsun-Ordu-Trabzon-Rize (and many offroad off of the main road need to be talked if you choose this route)(also interesting spots)
2- Cappadocia, South and Western Turkiye : Istanbul-Bolu-Nevsehir-Cappadocia-Aksaray-Konya-Beysehir-Egirdir-Barla-Isparta-Denizli-Pamukkale-Salihli-Balikesir-Edremit-Kucukkuyu-Canakkale-Dardanalles-Istanbul or back to border
Interesting spots could be mentioned after you make your decision.
One week is not a sufficient time for any of them...
