Some sites are clearly in Spanish, but since you're planning to bike around S.Am. you'll be learning that pretty quickly and using google translate to help in the interim

Paper Maps / Map Books:
Colombia: Excellent, excellent road map / route guide available at toll booth offices for about 15000COP with altitude profiles, tourist attractions, all you can dream of!
Brazil: I'm told that the Guia Quatro Rodas map book is good and available at some service stations.
Venezuela: Found reasonable maps at reasonable prices at Pousada Monica, Santa Elena de Uairen.
