Garages on the road
Looking to do an oil change on my bike before heading to Morocco. Any garages near Gibralter to pull in and change my oil. I just need a shop or empty bay?

There are zillions of little moped shops all over the place along the south coastline of Spain. Buy the oil (and filter) needed for your moto at a shop specializing in your brand of bike, then go to any one of these little shops to have them to the work. It won't cost you much.
Unlikely you will get to Morocco from the south of Spain, though... ferry service has been suspended for many months due to political tension (not COVID) between Spain & Morocco. There are several active discussions in the Morocco Regional Forum here on the HUBB that you can read through to get a better understanding of the situation.

Try https://www.facebook.com/QuickFitLtd/ They're trusted for African bike travel tyres. Maybe they can suggest someone reliable for an oil change rather than any old street/ scooter shop. From the frontier, cross the runway and left at the roundabout

Here is my cheap 2p. You can do this anywhere
If you have your own oil, all you need is an old 5litre oil container with screw cap.
Buy petrol in any garage, (offering overhead shelter, light and if you're lucky free paper towels).
Ask if it's ok to work on your bike, go bin diving to find an empty 5lt oil container. If not garages often can give you one or offer some plastic container.
Use that old can (ensure screw cap tight) after cutting a trap on one side to catch your old oil.
Change your filter and refill your moto/ 4x4/ camel! ;0) with fresh oil.
Now decant your used oil into the oil can you brought or bought and dispose of both responsibly.
Simples and costs null €.
Doable anywhere and I've been doing this for over forty years without any problems.
