I'm not an expert off-road rider either. I did a lot of off-roading when I was young with friends in the woods and I wasn't that bad but it was with much lighter bikes. (Honda 125 xls then 500xlr) And without any luggage !!! 
2 years ago I traveled to North America. Alberta/British Columbia/Yukon/Alaska/Western USA then Washington, NY and montreal to ship back my bike to France. I did somme trails in Alaska and the US (especially in Moab  ) but I was on tarmac most of the time.
If they are easy tracks it suits me perfectly. I'm not looking for difficulty.
Now I have a 700 Tenere because it weighs 25kg less than my Africa Twin and that counts when you are fully loaded.
I've planned some easy trails in Turkey and Georgia but the best is yet to come in Kazakhstan with the Mangistau desert and its fantastic landscapes before arriving in Tadjikistan and Kyrgyzstan where there are so many beautiful things to do...
If my way of traveling speaks to you, let me know. I take my time on the road and I stop from time to time to take photos or to fly my drone...
