There is an active and fairly lengthy discussion about riding in Tunisia at this link: Tunisia.
It doesn't address your search for folks to meet up with, but it does contain quite a bit of useful (and up to date) information.
Be aware - if you are not already aware - that we are in the middle of the Holy month of Ramadan, which means no eating or drinking during the day for Muslims. That likely won't present too much of a problem for you in big cities like Tunis, but once you get out into the more sparsely settled areas, you could have a lot of difficulty finding food to eat until the fast is broken in the evening.
Also, if you have not previously travelled in a Muslim country during Ramadan, be aware that all commercial activity generally grinds to a halt at around 1:00 in the afternoon, regardless of what the "official" hours are. This is simply because if you have been fasting since before sunup, you run out of energy and close up shop at about 1:00 in the afternoon.
