1986 Yamaha Xt 600

I have a 1986 Yamaha xt600 that I am trying to bring back to life. I took the carb(s) off and cleaned them out. I replaced the diaphram on the side of the carb. I rodded out all jets. Its clean enough to eat off of, but it is soooo hard to start when it is cold. I look like this  when I finally get it started. I sometimes have to give it a boost to get it started. Once it starts and stays running it runs pretty good. When its warm you can kick it easy one time and it will fire right up. So anyone have any ideas as to why its hard to start? How does the choke on this carb work and how do I know if it is working correctly?
Also what are the valve clearences?
